My kitchen toliet sucks so I'm ripping it out (ETA added pics of the BEFORE)

Over thing leads to another and the linoleum is going in favor of tile and the big debate right now is shiplap vs tile walls.
FML I hadn't planned to redo the bathroom and salon but here I am.
What do you suggest for the walls? We already found the tile and the vanity.
here's what it looks like at the moment. including the inside of the pantry we're looking at close to 90sf of tile.
Salon sink is on the same wall opposite the bathroom sink.
here's a rough idea of what we're going for. already have the same window shade in our master bathroom from the online blinds store recommended on here.

Shut off valve doesn't work.
Wife cuts hair and has a full salon behind the kitchen as well.
We've ignored the shitty linoleum but the toilet is cracked and I've had it.
ETA I'll post pics. We're doing this project fast.

We don't want a farmhouse look but even the newb million dollar houses in Stephan's valley are doing shiplap in the bathrooms.

Kitchen BATHROOM toilet.
We are looking at something along these lines except tile or bead board instead of shiplap. We bought the tile, toliet and vanity already. The tile we bought looks almost identical to this photo. I took out the old toliet this morning and took it to the dump so now we're committed.
