Precisely why I don’t wash often. I used to wash them, but then we got a single compartment sink and I hate it for washing and rinsing. They’re popular, but not the way I grew up washing dishes.

Funny I will never go back to a multiple-compartment sink unless it was massive.
To the OP, late to the party and you seem to have made up your mind but we have enameled cast iron sinks and love them. Kholer for example has quite a few options many of them in black. Enameled cast iron is a lifetime sink if you don't ever feel the need for a change. We have matching colored ones as our main sink and a prep sink on the island and after 15 years you can't tell them from new.

We put in a granite-composite sink that is dark brown/coffee several years ago, and we've been happy with it. No cracks, cleans easily, and the housekeeper polishes it up with mineral oil every couple of weeks.
It is very deep, which is great for accommodating big pots, but it can be tough on the back. To help with the leaning over issues on ordinary use, we bought a nice stainless rack for $100+ that fills the right compartment and raises items up an inch or so for easier access. It's been in there for years and looks brand new.

My sister has gray, looks really nice with quartz countertops
