All other plumbing in the house works fine so it’s obviously something to do with the faucet. It will work fine then suddenly stop flowing. If I hit the faucet it’ll start flowing again. Also it often sputters or “jumps” while flowing. Is there anything I can do to fix this short of just replacing the whole faucet assembly?

Check the screen on the faucet. It may be stopped up.

Is this a pull down faucet? I have a delta that you tap to turn on. The house for the pulldown delaminated and blocked it in a similar manner as you're describing.

Is it a touch on/off faucet? If so, need to replace the batteries.

I know it's probably not but I always assume there's a snake stuck in there when something like this happens to me.

It’s probably a spring or rubber Washer. Look up the model number and get an OEM re build kit, I’ve had bad luck with the generic ones.

Could be the screen clogged as said but doesn’t seem as likely. My guess is you have a loose washer or old spring that’s allowing some play in a ball joint.

Have one of these. Thought it would be practical but it's not at all. I stopped replacing the batteries and it's now just a regular faucet.
