Going to a lumber yard is a good idea. Not a big box type, something like Geuydan on Airline or Carruth in Mid City.
I found the guy I used on the Nextdoor app. This is a 2 man job. But I wanted the owner on site, not a company that would send over employees to do it.

If you know a good sheetrock guy, start with him. He probably knows a handyman looking to make a few hundred bucks, and its worth it if you're not inclined to do it.The sheetrock guy will be the most important step in the process since it's the finish work.

I did an 18' load bearing wall. Built two temporary walls to hold up ceiling (one 4' on each side of the wall that was coming down). Removed wall and pulled chalk line to remove the joists to allow enough room for my LVL. Then attached old ceiling joists to the LVL with joist hangers. My ceiling is now smooth, there is no drop down or bulkhead. Looks great.
Everything not including flooring cost me about 2k. I had one plug in the wall that we just removed, and there was no plumbing in the old wall.
Was pretty easy. Did it over a weekend.
