So after thawing out everything, checking the freon, checking the coils etc, it turns out the culprit was a faulty Nest thermostat.
I’ll summarize what I was told as best I can, as I understand it:
Apparently the thermostat was causing the outdoor unit to condense even when the inside unit was not. Was causing it to freeze which led to it freezing the whole unit. Also explains why the thermostat wasn’t reading the correct temperature.
Installed a basic honeywell therm and everything is now operating as it should. F*** Keefe’s and F**** Nest.
Recommend Burkhardts for anyone in the nola area. They came out and did the work, spent the time, and figured out the problem instead of trying to just sell me an expensive replacement. Will use them again.

Thanks for the update - very informative. Who would have thought - Nest thermostat. Numerous HVAC techs hate Nest thermostats b/c of the potential problems they can cause to HVAC systems as you experienced. Here is thread on a HVAC forum where some techs from around the country express their opinions on Nest. LINK. Getting a second opinion saved you a boatload of $$$.
I’ve heard good things about Burkharts - glad you were able to get knowledgeable HVAC tech with good diagnostic skills.

Wow. For an Hvac company to not have diagnosed this is pretty jaw dropping.

They (Keefe's) charge for quotes too. I needed my meter pan changed out this year, before hurricane season. They wanted $135 to come out and quote the job. No thanks, I'm not paying a contractor for a chance to come work for me. "Feel the love" (Keefe's slogan) while they pick your pocket.

Lot of hacks in the hvac business. Many techs receive commission on what they sell, so many will try to sell expensive equipment rather than troubleshoot a simple problem.
