Why do most higher end racks favor canvas safety straps iver steel bars?

Easier to move and can hold a shite ton without damaging your bar

Yeah, pins can frick up the knurling on your bar. Wouldn't worry about it if you bought a cheap bar you plan on replacing, but if you bought something nice the straps are worth considering.

I prefer pin/pie safeties because they make rack pulls easier. Plus you can always wrap them in some sort of tape (e.g. replacement tennis racket grip tape) if you’re concerned about barbell damage.
There’s a great video of some guy dropping an 800 lb loaded bar onto the strap safeties from shoulder height. Didn’t break or bend the rack or anything...damn impressive

I have the straps. Much prefer them to the pins. They protect your barbell, it’s much quieter and if you do fail you don’t get reverberations.
I love that I can do Anderson Squats without banging on my bar.
