Force feeding and feeling constantly like you need to throw up, and STILL not gaining weight is so defeating. And if I stop for whatever reason (sick, vacation, etc) I lose anything I gained in like a week.

That's the whole dilemma I'm facing. While I feel stronger, I feel like most my weight gained is water weight.

Have to answer 2 questions:
1. How many Calories are you eating per day?
2. How many are you burning during your workout (fitbit/Apple watch/or a TDEE calculator can tell you)

When you say you feel stronger, it leads me to believe you do not know it. A linear progression program helps you have markers in added strength that will aid your process.
There are a variety of valid options. If you liked 777's Greyskull link, that is certainly one valid linear approach.
The upside of those programs is they are designed to progressively build strength. It is very hard to progressively build strength without some size coming along. You will have distinct goals and markers on a good program that will remove guesswork about your progress.

yep, other programs i would recommend besides candito lp is madcow or 531 boring but big challenge on tnation.
