Mountain Bike Advice

Thinking about getting a mountain bike. I am confident in my knowledge of road bikes, but I know nothing about Mountain Bikes. Not looking for a name brand or specific model. Just want things like what is the comparable to Ultegra/Dura Ace/Sram Red/etc.? What am I looking for in quality disc brakes? What wheel sizes are good for different types of riding? Front vs. Full Suspension?
I know almost nothing other than the face that these things exist. I live north of Houston and have some creek bed trails to ride along with the state parks with trails that are within 45 minutes of me. I like my bikes and am not afraid to spend a little for quality stuff. But at the same time, my money is focused on my tri bike, so no need to break the bank on this. I just don't want to cheap out on something, then get into it like I typically do, and then buy another bike once I know more.

I got a rockhopper 29in w disc brakes. I know nothing about bikes but will tell you if you hit the front brake it will stop you fast enough to send you arse over teakettle.

What type of riding are you planning on doing? Straight XC or are you going to mix in some enduro or downhill? Are you interested at all in CX with your road experience?
Some general good beginner bikes are:
Giant Anthem for XC
LINK
Santa Cruz Nomad for Enduro/Downhill
LINK
Canyon Strive for Enduro
LINK
I always buy the lowest price in the line and upgrade all the components myself. You get much more bang for the buck that way. My favorite XC bike is my 2012 Giant Talon (cheap bike) that’s been completely revamped with awesome components.
ETA: I normally ride a Cervelo R5 for the road.

I'm thinking a XC bike will be what I'm going to like best. No downhill around me. REally just using this as a way to supplement training and also have something to ride the multi use paths with the family. I've given up on the road for the time being. Sold my road bike (Cervelo R3) and just upgraded my tri bike and trainer set up (Felt IA). Going to do most of my training for those races indoors, but would like to get out every once in a while. Just staying off the road and would like to do it with a mountain bike. The routes I take on my road bike are getting busier and busier and people just don't have the patience to be civil.
I don't mind upgrading stuff, but at the same time it's cost effective to buy in a package a lot of the time. I definitely don't mind buying used components and such and realize a deal can be had. My Felt is an Ia16 (105 components), but I have all the Di2 stuff purchased already to convert. Just waiting on a fitting later this year to pick my new aerobar setup. Addiing Di2, new aerobar, new brakes, etc. is still going to come in cheaper than buying the next level up IA10 (I did get a sweet deal on the IA16)

Found a 2014 giant xtc advanced 29er that apparently has brand new warranty frame. Thinking I can get it for under $1k. Seems to be a pretty good middle ground of a good bike, but maybe a little older than I'd typically buy.

XT = Ultegra
XTR= Dura Ace
I wouldn't worry about full suspension around Houston but front shock is preferable. I prefer 26"wheels but I am old school.
