not sure how far you are willing to stray but Chambers Bay (site of US Open a couple yrs ago) is up the coast in WA

While I would be more than willing to go several hours out the way to play a nice course, don't think the other person I'd be with or my wife would want to.
The best one I can tell from courses around Portland is Pronghorn which has 2 courses, the Jack Nicklaus and the Tom Fazio. Anyone ever played these two? or know of another good course within a hour or so of Portland?
Just now seeing that it is 2.5 hours away from Williamette Valley which is probably too far for us to Uber. Any other suggestions would be appreciated as all I can find are Beaver Creek type courses and we want something a little nicer.

Just had a buddy play Pumpkin Ridge and I think he was near Portland as well. One course is private, and I think the other is open to public. The pictures he took looked awesome.

Just checked that one out and it looks nice. Seems like the 3 best in the area are Pumpkin Ridge, Reserve Vineyard and Landon Farms in no particular order
