The optical sensor and possibility of using the L Joycon as a mouse is an interesting wrinkle that I didn't have on my Bingo card.

Yeah, these are the clear missing pieces to Switch’s incredible line up. I’d release them as a single game and sell it for $50. Would be a good launch. I don’t think we’ll get a completely new 3D Zelda game for at least another two years, although I could see a Link Between Worlds remake as well in the same engine as Link’s Awakening and Echoes of Wisdom.
I’d expect the next 3D Mario game as a launch title and well as Metroid Prime 4 (the later being the final Nintendo title for Switch).
Animal Crossing I think will be another year and same with Smash Brothers (although I’m just hoping they do Ultimate Deluxe with that and add 20 new characters, stages, and more modes).
Other possible launch titles:
Super Mario Maker 3
Breath of the Wild/Tears of the Kingdom Deluxe
Pokémon Generation 10
Pokémon Legends Z-A
Hollow Knight: Silksong
Final Fantasy VII HD
Grand Theft Auto 5

This would be amazing. I had a DSi to play when I was working out of town, so there was no reason to sink money into a 3DS when LBW came out along with that new hardware.

This is definitely possible. The only reason I think we could see one sooner is that both recent Zelda entries have clearly used the engines of their predecessors, which would lead me to believe that the "real" games are getting the attention of the full dev teams.
Ditto for Mario.
Besides, has there even been a Nintendo console that didn't have a new Mario title at launch?

We need a new Donkey Kong game. The tropical freeze remaster was a lot of fun and I'm sure DKC Returns will be great too, but there hasn't been a new DK game in a long time.
I'll throw this out there too. I'd be down to play an updated "super Mario all stars" with the original games + Super Mario World done in the style of new super Mario Bros.

No shite, doesn’t mean I wouldn’t like it to be.
Would be nice to play a Pokémon game with a stable frame rate and the next Xenoblade where it doesn’t look like Vaseline is on the screen.
