Guys, is this a game a casual player can just pick up and play for an hour or two at a time? Also, is there any advantage to going with the PS3 version over 360, or vice versa? (PC isn't an option)

I don't think that's correct. Everything I've read has said that consoles were the main target for the game and the PC version is a port.

Just an FYI, you can definitely have gay marriage in this game. I cleared out a cave for a guy and when I came out to collect my reward I accidentally asked if he was interested in me and he said "yes, aren't you interested in me?"

You can save at any time, so yes... you just wont want to quit after an hour or two.. + the time flies by.

You could, but I don't like to play unless I have a couple of hours to kill. Usually, once I start playing, nothing productive gets done for a while, unless you consider killing dragons and putting baskets over shopowners heads productive.

Technically you CAN just pick up and play for an hour or two, hell, you can play for just 10 minutes if you want. The issue is will you be able to just play for that long, haha.
Probably very little difference between the PS3 and the 360 version, choose the one with the controller you prefer.
