i used the companions in order to build up one-handed, two-handed, heavy armor, blocking, and archery
once your skills in certain areas get high enough they can no longer train you because your skills are higher than theirs
ive maxed out all the training i can get from them so i have Vilkas from the companions guild follow me around
i've decked him and my character out in daedric armor

Lew, in the thieves guild city, there is a Mage in the inn, does one hit kill damage

Also, once you are master of the fighter guild they will deal decent damage for you

I really felt bad with Lydia. Once I started the Dark Brotherhood quests, which was pretty much after I got her, I made her stay at home (
) because I felt bad if she came with me to assassinate people. No reason why other than I have some weird since of forboding that she would turn me in and the entire game would turn on me

I was playing and ended up doing something with my kids, one thing lead to another and I woke up the next morning and my xbox was on. Turned the TV on, and apparently while I was standing in the middle of nowhere a bandit decided he would attempt to dagger me to death, but failed. My heavy armor was at 100 after leaving it for like 15 hrs.
I wouldnt recommend it being as how your xbox may over heat but I thought it was funny nonetheless.

another good way to to do this is let a pack of wolves attack you
if you're heavy armor is good enough they wont be able to kill you and your heavy armor skill will keep going up
but you cant have a follower with you because they'll kill the wolves

You can also do this same thing with a shield to level you're blocking. Find a couple of weak enemies and duct tape the block button down. Walk away for a while (maybe an hour depending on level) and it wont be long until you're blocking skill is at 100

Go to pg. 168 of this thread. FoulDeliverer's second post is a link to a spreadsheet with all of the followers, location, race, their level for every skill, if they train, and their maximum achievable level. I'm somewhat skeptical on the maximum levels, but everything else looks legit.

I'm using Benor right now (you have to fist fight him in morthal first) he is my favorite so far. Great with two handed weapons. I have him equipped with a glass greatsword of scorching and full dwarven armor. It is ridiculous the carnage we leave behind once we enter a dungeon.
