You really only "level" (gain xp) by using your skills. Why dick off helping jenny recover a flower when you can be the #1 assassin in all of skyrim with a badass horse And tricked out weapons...

in the mead hall in whiterun
there is a daedric heart sitting on a tray in one of the rooms
it respawns every few days (in-game), but you cant visit the mead hall during that period or it wont respawn until another few days later

Also once you find Mehrunes Dagon's shrine there are 4 daedra warriors that respawn there every few days

and when you do the Azura's star quest, you fight some guys IN the star that drop daedra hearts

There are multiple other groups that have quest lines too though:
The Companions - fighter's guild
College of Winterhold - mage's guild
Dark Brotherhood - Assassin's guild
Thieve's Guild
I'm sure I'm forgetting something.
Each of those has their own extensive quest line, and none of them intertwine with the main quest line.
