I'm kinda glad I can't hit lures from my desk. Productivity would be zero.

Also..pokemon can come in different varieties. They will have different moveset which only applies to gym battles.
A hyper beam 70 raticate will be better than a dig 25 raticate.
XL means they can be a bit stronger than normal but not by much

That's not exactly how the rewards work. You don't have to defend a gym for 21 hours to get the reward. You just need to have a Pokemon in any number of gyms (max of 10 to earn rewards) as a defender when you first click on the shield. Once you claim the reward, you can't claim again for another 21 hours, but you still get the initial reward no matter how soon that gym got overtaken.

Do pokestops also throw out lures or is the shop the only way to obtain one?

I think lures and incense come from only the shop and leveling up.
Pokestops drop balls , potions, revives, eggs, razz berries. Someone higher level than I may correct me

I've gotten an egg incubator from a poke stop before so I'd guess you can get lures and incense too. Just that they are probably really rare.

An up and down day for me. Got several Pokémon that I hadn't seen before (Nidorina, Machop, Ponyta, Tauros). Then I lost out on some high number Pokémons and others I could have traded for candy. I accidentally used a lucky egg and pretty much did nothing with it because it was during my commute. 
But here's the oddest thing...I got home this evening and opened the app to find a Pokémon in my inventory that I never captured:

So I went for a two mile run today and figured, hey, I'll get some eggs to hatch while I'm at it. Cool.
I ran at the track -- apparently the GPS used by the app isn't sensitive enough pick up repeated loops. Two miles = .3 km
I guess I'll have to do neighborhood runs.

Went on a 40 minute walk with incense and made 15 catches.
Mostly the usual garbage/trade fodder, but I did find a Cubone and hatched a Meowth.

I finally got a lure after leveling up. I'm gonna drop it tomorrow evening and see how many people come hauling arse to it. Lol
If I was a bar owner by a pokestop I would host lure parties every weekend. Just buy a shite load and drop them in every 30 for patrons. Profit.
