I have a running joke with a friend, and I asked him how much money he'd put down on me not liking this at first and then months down the road really diving in. He said a lot.
It was that way for Origins, Odyssey, Valhalla and Mirage. I eventually found my groove with the games, finished them, and loved them all.
My personal opinion, that's indicative of fundamental changes in gameplay and structure between each game. I go in expecting a typical AC experience, it's not there, and I bounce. So when I hear "more of the same" whenever a new one comes out, I'm very skeptical.

Origins Valhalla and Odyssey have far more in common with each other, than any of them have to do with 1-4
So your concept of typical AC experience would likely be different than mine.
Origins through Valhalla are mot really AC games, so much as Open World RPGs with the standard Ubisoft mechanics, with vague (and completely unimportant) references to AC lore.
A lot of people like that. I liked Odyssey, but it took me pretending it wasn't an AC game.
Valhalla was utter dogshit.
Just a total slog of repetitive bullshite and zero meaningful side quests. It wasn't even a good RPG
But it sold well, thanks to a convenient pandemic.

They haven't been able to recover the overarching storyline since the whole Desmond debacle. None of the other modern day protagonists are interesting at all.

I like assassin's games with actual stealth mechanics and non shitty combat.
But that's my opinion.
I have reverence for SOME of the original AC games, but the modern ones are simply more fun to play and the worlds they craft are mind blowing.

And none of them are important. Honestly, if they would do away with most of the modern day parts, the games would stand fine on their own.
None of that affects my opinion of the games because they don't matter. AC2 is one of my all time favorite games, but the Desmond stuff was very secondary and I just wanted to get back to playing Ezio.

The story hasn't moved since Desmond, and the games have gone downhill also.

Play everything up until Syndicate and then jump to Origins and Odyssey. No way you can say those are comparable.
I maintain that the only reason the earlier games were considered stealth is because you tried to avoid combat at all cost. Just waiting for the right moment to hopefully get a counter and 1 shot an enemy just to get it over with.

Maybe you're just playing them wrong. Combat is actually fun and engaging now. Button mashing often will lead to a bad time.
The early games is literally every enemy waiting their turn and you making sure you hit counter or block at the right time.

Button mashing is what the AC-style combat is called. It used to be more structured and tactical. Now it is a but less so, but still basically the same. If someone had only played 3, and picked up Odyssey, they would have zero problems figuring out the combat and vice-versa.
but the tactical dodge/counter was still there. They wrecked dodge/counter in Odyssey. It was functionally useless, unless it was for specific boss encounters

The fact that people are even remotely hyped for an Oblivion remake shows how bad their release schedule has been. I thought everyone hated remakes and now some folks are desperate for a Bethesda remake because their original content has sucked even when they take a decade to make it.
