As I get older, I tend to start games on easy mode.

Normal is what most games feel the most balanced around. I've played Oblivion and Skyrim on the easiest difficulty setting though. Makes exploring the world a lot more fun.

One of the Oblivion mods I consider essential is to rebalance/nerf highwaymen. If I run into something bad, I want that to hurt, but I don’t need a three minute encounter with a random band of thieves every thirty steps. People wearing full deadric don’t sleep in tents.

The first Dishonored game is another one that plays very differently on harder settings.
On easy/normal you can fight/hack and slash your way out of most any situation, but they'll kick your arse if you're not careful and sneaking is much more difficult on hard and above.
