Her HP is so low that if you don’t get it on your first hit to agro, it’s almost certainly not going to happen.

Let him take over and attack him. Not only will he get crushed, but the rest of his playthrough will become functionally impossible. Good life lesson

In the building just before (or after if you’re coming back) the two dark sorceresses before the weird guy with the cross and chain weapon, there is a chest that you have to jump to (it’s by a fireplace) that’s actually a mimic. Kill mimic, get key. Go back to the arena where you killed Artorias and go up the not fog walled stairs. Unlock the door, talk to the giant. Tell him you’re vexed by the dragon and that you persist in wanting to kill it. Queue cutscene.
Eta: Also, feel free to come back for Kalameet. He’s optional. Manus is the actual end boss of the DLC.

Haha yup.
The tacit “order” of the DLC is to have you explore around the arena after Artorias and notice the locked door. Then either not notice the path down to Kalameet, or have him skullfrick you and you give up, so you continue on down the path to Manus (ideally noticing that chest), and then go “huh, key, door…” and for Gough to bring up Kalameet at that point. But it’s obviously a bit opaque, as its Dark Souls

Leave Kalameet alone for now. It’s a very different fight from pretty much any other boss, so it takes some breaking of normal muscle memory. Go after Manus. Do a suicide run and learn his slow recovery moves. There’s honestly quite a few of them. With that said, really only one, the extremely delayed (he’s going to roll catch the frick out of you multiple times with this until you get used to it) long arm/hand slam, can you punish with more than one hit. Everything else is pretty much one hit only. His second phase is mostly fine, but it adds longer combos (moves that were safe in the first phase are frequently part of longer combos now) and he has… three? Dark magic spells. One rains down, one starts wide and closes towards the middle, and one (this one sucks) is a very quick shotgun burst. If you’re too close to him when this procs, it’s extremely difficult to trigger the amulet fast enough to repel the spells (oh, right, yeah, that’s what the amulet is for. You got the amulet, right?).
It’s honestly very similar to the Atorias fight in that you have to be patient, stay focussed, and don’t get greedy. He will punish your greed every time.
And again, when he roars, get the frick away. Getting juggled to death sucks.

I got him down to a third or so health without the amulet. Is the amulet even worth it?

Dodging his dark spells isn’t particularly simple, and you can only practice that after getting through the first half of the fight of each time. Much easier with the amulet, and very easy to get.
