So is there a specific strategy I should be looking for in regard to each boss? Obviously the Asylum demon is pretty straight forward. But then, awhile later I ran into my second demon on some parapet (I think he was some sort of goat monster). Proceeded to get killed in 3 hits while I did little to no damage. Then met a different demon by going down close to Blighttown. I had the help of a higher leveled character whom I summoned for that one. Lol to that - demon one shot insta-killed me. Am I just progressing too quickly through the maps without leveling quick enough? I'm currently at lvl 12.

there are certain strategies that can be employed with each boss, but it differs with the build you choose.
the capra demon (blighttown demon) is a real motherfricker when you first encounter him. If you are a melee build, you should be more aggressive, keep you guard up though. If you are a magic build, flee and try to get some distance.
I think a summon is a good call for any boss on your first run. They can help you power through.
You'll get to a point where you can pick out the traits of the various bosses and plan accordingly. Solo runs are possible for any boss. Trial and error is part of the game.
ETA: don't think that your shield is your only defense. make use of dodging. why take the hit when you can simply roll away?

That was what I did wrong. Dropped my shield for two seconds while trying to maneuver around him and got squashed like a cockroach.

I try to do this, but every time I do my little barrel roll it takes years for me to get back on my feet (I guess because I chose a knight). By that time I've already gotten hit while I was struggling to get back up.

recovery time from rolling is determined by your characters ability to handle the weight. if an armor set is too heavy, evasion will slow or you will be unable to evade at all.
You have to compensate with defense or wear lighter shite, I'm afraid.

I've determined the Dark Souls "community" is a bunch of assholes. I'm trying to get some help to fight Gwyn and finish this POS when I get invaded. Really dickhead? I'm at the end of the game and you want to invade me? He got sent back to his world anyway b/c I was about to walk thru the fog door. Unfortunately for me, there wasn't a summon sign anywhere to be found.

frick the capra demon. I absolutely hate that motherfricker.
If you're playing a knight, you should be able to block most of his attacks. Except when he swings both blades at once. And his jump attack where he slams both blades on the ground will destroy your defenses. It's best to strafe when he does this. The real difficult part is the stupid fricking attack dogs that pin you down while capra fricks you all up. Get rid of those first, then make your way up the stairs and onto the archway, pop an estus, lure capra at you, jump down and he should do the double blade lunge attack. It takes him a while to recover, so from there you can carve him up.

There is a ladder if you climb it before the Taurus Demon comes there are two hollows up there you need to kill. Once they are dead climb back down, walk acroos the bridge until the demon jumps down from the other tower. Turn around run back to the ladder quickly and climb up. Once on top look and you'll see the demon below (FYI he will jump up there if you take too long) fall off while doing a quick attack for massive damage. Then run to other side of the bridge and he will follow. Turn around and evade then go back to the ladder. Do the proccess over again then rinse and repeat.

The Capra Demon is similar to the Taurus in that if you make it to the left side stairs without dying you can climb the stairs quickly kill the dogs then their is a ledge you can fall off on to the Capra Demon and just like with the Taurus you just have to rinse and repeat this strategy until he is dead.

the kiln is a huge area for PvP, unfortunately.
you can parry and riposte gwyn's attacks if you get the timing down. I was never that good at it, but just saying.
I'm not really in a position to help. I have a lot of shite to do before I gain access to the kiln again. I still haven't rung the second bell in NG+.
