Chipotle peppers in adobo sauce.
I dice about half the peppers in this 7 ounce can and use most of the sauce
Wife said it's the best chili she's ever had, and that's all I really changed. Gives it a mild smoky flavor and just a touch of heat

Not an ingredient added while cooking, but I love to make a little relish for topping

Along the lines of sour cream. But creams w a nice touch of lime juice drizzled over top adds that acid mine sometimes needs.
Eta maybe acid isn’t correct as I think about it, maybe adding some tang is a better descriptor
