Bourques in Port Barre: buy one of everything except their cheapest pork sausage. Their cajun seasoning is awesome. The boudin dip is basically pâté.
Riverside in plaquemine: get their sausage. Avoid the smoked jalepeno. Buy a link of boudin and cracklins while there. If you like a sweet heat, get their jalepeno cane syrup sausage.
