You’ve got to do something to make working weekends worth it, right? Plan on reverse searing these and topping with some garlic herb compound butter. Asked the butcher for 1.25” steaks, got 1.75-2”. Pretty looking prime ribeyes from Alexander’s though.

Those look nice, but can’t stand a butcher, meat cutter, etc that can’t fulfill a simple request, I have resorted to the finger width method when I tell them how thick I want something

I should have stayed there while he cut them and caught it on the first couple. My fault.

They turned out pretty darn good. Brought out the plancha to sear them on and then wrap with butter. 13 ribeyes and 13 happy people. Can’t wait for the new smoker to come in and able to do this with some wood over live fire.
