Will crawfish overcook in jambalaya?

I’m sure folks here have made jambalaya with leftover tails from a boil. When do you add them in? I usually cover the pot after I put the rice in and don’t really mess around with it after that. Should I add them later on during the cook time?

They are already cooked, so I add them when the jambalaya is done and I just mix them in to disperse them in the pot evenly.

I do the same thing with my chicken when I make jambalaya. I'll pull the chicken out and remove the meat from the bones and pull it apart in bit size pieces and add that when the rice is done. If added sooner and stirred a lot, the chicken breaks up into shreds most of the time.

Yea I guess they won’t take on any of the flavor if they cook in it.

I’ve never tried it but I’d put crawfish in when I bleed
the water down and turn the rice

People here are always mentioning overcooked seafood this and that. I grew up on dishes with shrimp and crawfish cooked for an hour or better. They will be fine, I promise. Its not like crawfish get tough if you cook them too long.

Crawfish Don’t get rubbery so much like shrimp do, so you have more room for error. I don’t recommend a seafood jambalaya, but if I were to do it, I’d use a crawfish or seafood stock to cook the rice and veggies and then add the tails at the end when I cut the heat and the rice is done.
