Wild game recipes

I’m interested to hear your recipes for deer, hogs, turkey, ducks, etc. could be whole cuts, sausage, whatever.
I’ll share my favorite way to prepare sausage. No, there is no heat involved. Yes, it is safe if you keep your temps regulated and your grinder clean.
Dry aged pork sausage:
5 lbs of fresh ground wild pork/fat 4:1
1/4 cup kosher salt
3 tblsp coarse pepper
1 1/2 tblsp sugar
1 tsp #2 curing salt(nitrate and nitrite combo)
3 cloves garlic chopped fine
Hog casings
Once sausage is stuffed, prick all over to let water escape, weigh and record each link. Hang in a curing chamber or other temp controlled area with an avg temp of 60* until each has lost 30% of its weight, approx 20 days

Ingredients:
2 or 3 whole ducks, picked not skinned
1 or 2 links of good smoked sausage or andouille

In a large Dutch Oven on stove top, place ducks, seasoned to your taste with salt, black and red pepper, in a few T of oil and brown well on all sides. Remove ducks. Add greens to pot, water or stock, sausage, garlic, and place the ducks back on top. Re-season the pot with salt, black and red pepper. Cover with a tight lid and place in a 275 degree oven for 2.5 to 3 hours, until ducks are about to fall apart. The greens are frickin' money!
I got this off the OB last year or so. It’s not my recipe, but it’s stellar. One of the best duck dishes I’ve ever had. All credit to the poster who passed it on
