Why won't my Banana's Foster catch on fire????

I'm using a 90 proof dark rum, so I thought for sure it would catch...what gives????

use some 151 that will catch for sure. I have never tried 90, but it is less than half alcohol so that might be a problem

It is much easier with 100+ proof alcohols. Anything below that is harder to flame without heating it up; it is possible, just harder.

Hmmm I get huge flames with standard bicardi rum. I dont think his pot is hot enough you add the alcohol off flame then put it back on the flame and then it flares up as the pot gets additional heat.

Make sure your pan is also shallow enough, let it breath
