Whole ribeye and strip loin of a lesser quality

Whole select ribeye and strips are on sale tomorrow. Can I cook this as a roast and make it okay? I have a sous vide rig. At minimum I can get it sliced thin and make cheese steaks.

Ideas?

Invite good friends over.

Sous vide the entire roast.

Drink beer.

Slice as thick steaks.

Sear on a firey hot surface.

Enjoy.

I haven't.

But many have an it's usually not a problem as long as the bag is intact.

Obviously you wont be able to season, but I dont think that's a problem.

Don’t be afraid to smoke that thing. Let the leftovers get cold and slice into roast beef sandwiches

Are they whole primals still in cryo or can you have them cut them for you?

If you can see the cross section, you’ll probably find some that still have marbling like a choice grade.

The cuts from the chuck end of the rib roast will have the best marbling. Use that for steaks. Select Strip Loins will be tougher. I’d prob stay away from those. Or slice those really thin for teriyaki steaks or steak tacos

Thanks. I'm assuming it's buy before you try.

Ribeyes $4.99lb, Strip loin $3.99lb. If me and the dog eat it, I'm buying one.

Bring it to the butcher counter and ask them to cut in half. If it’s a good store, they’ll do it for you.

They wont be awful as long as you cook them nicely.

The marbling will be a taste issue, but they'll still be good to eat if cooked correctly

Friend of mine picked one up for me when he went hunting this weekend and that's what I'm gonna do.
