Who here has carbon steel pans?

Had a few catch my eye but I've never owned any. How do you like them compared to cast iron or non stick?

I recently bought a couple Made In carbon steels...done a few cooks...love the look, super light, heats quickly...however I don't notice any real advantage over cast iron other than it being lighter so far.

I got a de Buyer 10 inch for Christmas. I was surprised at how quickly it discolors; but have been very impressed with its heat retention and non-stick capability. I find the shape to be a big difference than my cast iron as the sides are angled. Makes it more of a sauté pan compared to my cast iron skillets. It's also lighter but still has enough heft to retain heat.

I have a DeBuyer crepe pan. I use it for crepes—but I’m sure it would be fine for other stuff. Shape of pan and low sloping sides make it impractical for anything else.

Carbon steel is lighter and heats faster but doesn't hold heat as good as cast iron. They are also easier to care for than cast iron i.e. easier to wash, season, and re-season. They are relatively cheap and durable.
For this reason, may restaurant kitchens use carbon steel pans.
