About to make some white beans with ham. Want to add in some greens and I'm wondering if I should sauté kale or spinach before I add it or just throw in raw.

Throw it in raw when the soup is hot, it'll cook itself.

Tuscan white bean soup is very good. I have recipe on the site I can find for you. I add whatever green I'm using in raw at the last minute.

I made a white bean soup with collards a few days ago. Just throw them in at the end.
