White Bean Side For Large Jambalaya

I'm cooking a 100 serving jambalaya for my employees next week. I have everything figured out for that using the jambalaya calculator. My question is about a side of white beans. I plan on using my 18qt mw pot. Is there a formula/rule of thumb for how many pounds of beans and salt meat/ham to use?

You're gonna get about 8 cups of beans per lb. Use 1/2 to 1 lb seasoning meat per lb.

I always do 4 lbs of beans for every 10 lbs of rice.
4lbs of beans = 1 lb. ham
4lbs of beans = 1 lb. ham

That's a good amount. You won't have any worries about not having enough rice.

1 small white onion diced fine
1 lb pickled pork
1/4 cup crisco

I meant lbs. of rice for the jambalaya, if I was confusing anyone.
10 lbs rice (jambalaya) feed ~60 (factor of 6)
4 lbs. white beans feed ~60 (factor of 15)
10 lbs rice (jambalaya) feed ~60 (factor of 6)
4 lbs. white beans feed ~60 (factor of 15)
