Will be traveling through Houston to Katy later this evening. Looking for a good place to eat for my FIL's bday.

Come on. Houston is enormous. What do you want? Price range? Dress code? Time/day?

Will be traveling I-10 so maybe something not far from interstate.

Casual dress. Say $40-$50 a person.

Close to 10 is the Washington Corridor which has Laurenzo's, el tiempo, and even Benjy's if you don't mind wading through the douche.
If you feel like French, I really enjoy Etoile which is on the 610 Frontage Rd not far from 10.
A little further from 10 but not too far is Bernardines which I'm particularly fond of and would spend the extra time to drive to if I were you, it's really solid.
You should be able to get a table at any of these but do call ahead so you won't have to wait.

Pappadeauxs if you want a poor imitation of Cajun food that everyone around here raves about for some reason.

Who raves about Pappadeaux's?

Just about every damn person I work with in Houston. Hell, I've got to explain to them that real Cajun food means no tomatoes in gumbo or jambalaya.

I work and live in Houston and Pappadeaux's gets suggested only because it's safe. It's ridiculously expensive for what it is and every dish seems overly loaded with either butter or cream. It's fine if your arteries' and wallet can handle it though. Despite tomatoes in the gumbo, it's still better than a big chunk of restaurants in TX and even LA, just not worth the money.
Gumbo is such an easy dish to make passable that I cannot fathom how restaurants everywhere get it so wrong. However, IMO,tomatoes don't automatically make it disgusting even if your trying to be a purist.

I wish someone would explain this to me some day. I make an extremely simple gumbo. It's delicious, would be easily scaleable, and keeps extremely well. Yet, practically every gumbo I try in a restaurant borders on inedible, barely resembles a gumbo, or both. I would love to know what they're doing.

It truly is one of life's great mysteries. Basic Cajun that's good but not great is ridiculously easy to make for anyone with a grasp of the basics. Why are there so many inedible "Cajun" dishes out there? Why does so much of it suck even in NOLA and Cajun Country?

Tads in Katy is new and has real Cajun gumbo

Why are you all recommending Cajun cooking, more in particular, gumbo in September to this guy? He's traveling through Houston go Katy, which means he's probably coming from Louisiana.
Caracol and good company seafood, or anything offshore recommends is my pick.
