When do you put in your CHOKES?

Ok...I typically do:

Add Water + Seasoning + Garlic + Onion + Lemon to pot
Bring Water to a boil for 20 minutes
Add potatoes
Boil for 10 more minutes
Add crawfish and sausage
Turn off heat when they begin to float
Add corn, shrooms, shrimp
Soak for 20-30


I've never done baby artichokes but this year I'm throwing them in too...when do I put them in?

I church key 4 holes around the bottom of cans of artichoke hearts and drop in with the mushrooms

I make a stuffing with breadcrumbs, freshly grated Romano cheese, fresh chopped garlic, fresh chopped parsley, a chopped up anchovy or two (or a squirt of anchovy paste), chopped up pine nuts, a few chopped up golden raisins, a good pour of good olive oil, a bit of lemon juice and a bit of balsamic. Cut the top of the chokes and snip off any of the lower pointy leaves. Open them up and clean them, then stuff and steam till the leaves come out tender. I put a slice of lemon on top while steaming and also drizzle some more olive oil on top.

I do this often... put them in with my boil on Good Friday.

I cut them in half, lengthwise (top to bottom), and put them in the same time as the potatoes.

I also put an equivalent amount of oranges to lemons.
