I'm bored of what I usually do, just looking for something different. Trying to stay away from Asian, I use those flavors the most.

I put olive oil, parsley, thyme, sometimes rosemary, sea salt, cracked pepper & garlic in a blender.... Rub it inside skin and out before i spatchcock chickens. I like garlic/herb seasoning tho.

Adobo sauce/peppers or chili powder might be an interestin addition to try somethin different

See if you can find some Louisiana fish fry Blackened seasoning at the grocery. It will come in a little blue shaker. That stuff is amazing. I use that and some Worsc. sauce to marinate chicken and cook it up. Delicious

This is an easy and tasty recipe from Cooking Light. My husband and I love these. The recipe calls for cooking under the broiler but I prefer grilling them.

Spicy Honey Brushed Chicken Thighs

Ingredients

2 teaspoons garlic powder
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground red pepper
8 skinless, boneless chicken thighs
Cooking spray
6 tablespoons honey
2 teaspoons cider vinegar
Preparation

Preheat broiler.
Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 5 minutes on each side.
Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 1/4 cup honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.

Sorry, my best chix thighs recipe is Asian: vietnamese ga nuong (grilled chicken)
2 T lime juice
1/2 tsp salt
1/2 tsp sugar
2 tsp ground black pepper
2 T Vietnamese fish sauce
Mix all together, pour over thighs. Marinate no more than 30 minutes (even 5 minutes is sufficient). Grill and devour. There is something magic about the fresh lime plus the fish sauce and black pepper.

I've always loved marinating in Italian Dressing. That's really simple but dammit if it isn't really good.

Batali has a really good recipe which goes like this.

You blend up olive oil, breadcrumbs, garlic, parsley, and anchovy until it is a paste. Smear it on both sides of the thighs. Pop it in fridge for about 30 minutes to firm up. Then grill. You get this nice crust and smokey flavor. Excellent dish. Also good on pork chops.

I use Stubbs marinade, he also makes a pork and beef marinade that are both damn good.
