The flowers are edible. You can cut a few off to promote new growth.

You can also cut about five rosemary sprigs, put in a pan with about a cup of honey and simmer for about ten minutes, turn off heat, cover pot and let it steep until cool, about an hour. You now have rosemary honey and can add a spoon to your Greek yogurt or a cup of hot tea.

You can also whole roast a frenched rack of lamb to medium rare, rest, slice into two chops, put on plate over a dollop of the rosemary honey and sprinkle coarse sea salt on said chop. Sweet and sour and it would work very well with your rosemary potatoes.

That is cut the rack into two rib chops.

If you have room you can call Bocage Bee Co. In Baton Rouge and they might put a beehive on your property for the rosemary. Bees are good so let the flowers bloom. If you don't like the flower just don't use it when cooking.

Rat-- have you tried to make the Pommes de Terres Soufflées? That's one I need to try out.

Yes I did them a couple of times. They are really awesome. You cut them so they are shaped like sliced bamboo shoots (the canned ones) and they puff up nicely. Quite a treat as well as a conversation maker.

I didn't use 2 pots of oil. I just did the first batch and raised the temp for round 2.

Half some new potatoes, and mix with extra virgin olive oil, fresh rosemary, minced garlic, thin sliced onions, and roast in the oven. Salt and pepper to taste.

Does allowing your rosemary flower affect the taste of the plant like basil?

I put some fresh rosemary in a new shrimp dish today. Made it with a milk/butter sauce instead of tomato based; served over pasta.

I didn't want to include any of the flowers because they are attracting bees and I need bees for my other plants.
