Might not be the last one I made but most memorable lately was a stuffed poblano recipe with corn and crema.

A recipe for a hot dog chilli sauce.... It's a pretty good hot chilli. Actually found it on Tik Tok.

If it's the (Ron G) one where you start off with putting ground beef in a pot of water, I made that also about 2 weeks ago.

Came out great after I added a little more tomato paste.

the mexican chicken thigh sandwich

Interesting, where did you find it?

I started marinating all of my chicken thighs like this:

Chicken Marinade Ingredients:
• 6-8 Boneless Skinless Chicken Thighs
• 1 C Olive Oil
• Juice of 2 Limes
• 1 Jalapeno
• 1/4 Cup Cilantro
• 6 Cloves Garlic
• 1/2 C Soy Sauce
• 2 Tbsp Each – Salt, Pepper, Cumin, Cayenne, Chili Powder, Oregano, & Smoked Paprika

Directions:
1. Combine all the marinade ingredients in a zip lock bag. Add chicken thighs and mix thoroughly.
2. Place in refrigerator and marinate for 2-12 hours.

The last new thing I made was Pozole Rojo.

Served it with a Mexican cornbread. Will make again, but will probably try the Verde version.

Yup that's the one.

It's good to put on a hot dog or as a topping but I wouldn't eat it as a bowl of chilli. I prefer mine to be a little more chunky for that.
