What to make with artichokes and chicken?

I have a 6# can of artichoke hearts and a large pack of boneless/skinless chicken breasts defrosted, and I don't know what to do with them. Any suggestions? I was thinking of some kind of stew. Thanks in advance!

Folse has a good recipe in the Cajun Encyclopedia with these two primary ingredients. Like a thickened stew or fricassee served over rice.

Pound the chicken thin. Chop up the artichokes (rinse them in a colander first to get the tinny can taste off), with some garlic, basil, maybe shallots or onions, and stir into some goat cheese (regular ole cream cheese will work in a pinch). Add salt and pepper to everything including the chicken. Spread the mixture on the pounded breasts, roll them up and put them together with toothpicks. At this point you can either bread and panfry, or leave naked, brown on the stove or bake, and cover with a lemon butter type sauce when done.

Cut up carrots and onion. This is really the only thing I like Italian dressing poured on but it goes good with it. Carrots, onion, artichokes and put around chicken. Put dressing all over and put in oven. Make rice. Take chicken and stuff out. Put rice on plate, put rest of food on top of rice.Oh, also add cut up celery to the mix, forgot.

Chicken Piccata... Sauté the chicken, add a little white wine, butter and capers. I also add some fresh spinach right at the end and serve over angel hair pasta.

I'd make a spinach n artichoke stuffed chicken breast


cream cheese
mozzarella cheese
ricotta cheese
minced garlic
diced artichoke hearts
canned spinach, drained and squeezed to remove water
season with S&P
mix aforementioned ingredients and refrigerate for stuffing


take chicken breasts and carefully insert knife near thickest part and slice a pocket for stuffing. This is done by feel

stuff chicken breast pocket with filling
spray bottom of baking or casserole dish with PAM or 2T of EVOO
add breasts to dish, brush with EVOO, dust tops with lemon pepper or favorite herb seasoning
add just enough water to cover bottom of dish
bake uncovered at 450 for 18-20 minutes until top browns
remove from oven and cover with foil, leaving 1 corner open for heat to escape
let rest 5-10 minutes then plate, serve, and slice

options: you can also add feta to the filling, and wrap chicken breasts with bacon

should resemble this
