What To Do With Jackfruit?

I was in Albertson’s today grocery shopping when I come across a giant weird looking fruit. The jackfruit. Spikey on the outside and obnoxiously large. All I knew in advance was that it was some weird Asian fruit so I decide to buy it for the hell of it. After about 45 minutes of work I now have about 4-5 lbs of fresh jackfruit and a big bag of seeds. Now the question is, what in the world do I do with all of this? Saw a recipe for Jackfruit seed hummus that I think I’ll try but not sure about the ripe jackfruit. Most of the recipes use canned or unripe jackfruit.
Any reccomendations from the F&D Board?

Vegans use it as a chicken meat substitute. So you could make vegan chicken tacos, put it in pasta,....anything you would put chicken in.

I believe that it’s the white part that surrounds the yellow fruity part that is used for that. I’ve never done it and can’t speak for it, but I do enjoy the yellow fruit part itself.

I feel like my wife made a vegetarian version of pulled "meatless" tacos once. It was not 1/2 bad.
