What to do with extra roasted pork belly?

I roasted about 3 pounds of pork belly today and made some tacos. What are some other interesting things I can make with the extra?

Cut up and roast up some potatoes withe rosemary, olive oil, salt and pepper. Cut up the pork belly into little chunks and put on top of the potatoes and put a fried egg on top of it all. Season to your liking.

Add to a homemade mac and cheese. Start with a bechemel, then slowly add your favorite melty cheese while stirring constantly. Pour over shells or elbows. Add the belly. For a bonus, add some diced roasted chiles.

Guess I should have said I’m looking for low carb ideas.

Wife has gestational diabetes so I’m keeping things pretty low carb.

Fine dice and toss into a cauliflower mash.
Toss it in omelettes
Toss it into ground meat you’re going to use for burgers.
Toss it on a blue cheese wedge salad
Toss it straight in ya mouf
Toss it in broccoli and cheddar soup

Well it was over three pounds so yeah, there were some leftovers.

I recently bought some pork belly to recreate these Pork Belly Gyros I love at a place called Lardo in Portland.

Try em' they are delish!
