Made mine a few weeks back, I made a
Chicken, Green Onion Sausage, Tasso and Andouille Gumbo. I also made Charro Beans with Apple Wood Smoked Bacon. I also made a pot of Pastalaya. All are in the freezer.

I grew up cooking the trinity and proteins separate from the roux.

In Lafourche Parish we call that a Wild Dog gumbo but you're missing a couple of proteins. Needs some smoked turkey necks, crab meat and oysters.

My wife refuses to eat it.
