What is the difference between andouille and smoked sausage when you get them from a butcher? Are there significant regional differences in andouille?

Andouille has chunkier meat inside and is usually spicier.

The former owner of Wayne Jacobs Smokehouse told me the spices in his andouille and his smoked sausage were the same. The andouille is in a bigger casing and has bigger chunks of meat and fat.

Bigger casing chunkier meat This makes for longer smoke time and more flavor for cooking.
