What does MSG add to a seasoning blend?

I was looking at the ingredient list for different seafood boiling mixes and notice that Zatarain's and Louisiana have MSG but Slap Ya Momma doesn't. What would be the reason for adding it or benefits to leaving it out? It's basically salt right?

Its a non-sticking chemical ingredient / agent. Stops things from sticking together, or so I heard.

ie: seasoning blend from becoming clumpy

I don't know about the anti-sticking/anti-caking properties of MSG. I do know it is a flavor enhancer adding a flavor called "umami". A lot of people consider it the fifth taste.

It is the savory flavor found in Accent, a good steak, soy sauce and mushrooms, for examples. It contains sodium, but the taste is not salty. I don't think it would add much to a boil, but it's great in soups, stews, jambalaya, gumbo, and other meaty dishes.

This is correct. It is not a salt substitute, but monosodium glutamate is the sodium salt of glutamic acid. That means for each glutamate ion you have an accompanying sodium ion.

Glutamate or glutamic acid is an amino acid (building block of protein) and is responsible for one of the five tastes that receptors on your tongue perceive. The other four tastes are sweet (glucose), salty (sodium), sour (acid), and bitter (many compounds, sometimes toxic).

So basically MSG adds an enhanced "savory" taste to foods, which is abundant in the foods listed above for example.

Today's version of KFC Original Recipe is seasoned with salt, pepper and MSG. Nothing else. I know, because I duplicated it at home in my pressure fryer. The 11 herbs and spices is a myth today.

I started breaking out in hives at th age of 20 every time I ate crawfish. Could not figure out why until it happened after eating at shings. Realized it was MSG. I started using Rex and cajunland. I finally went old school and started using the family formula that we used when I was a kid. I only use it now and eveyone thinks it's better than the premixed seasonings.

MSG is not as bad for you as salt is. Stadium is correct in that KFC uses MSG on most of their food. I've been using Accent for years and never experienced any side effects. Some people do have a reaction from it though.

From what I understand, some seasoning companies and other food manufacturers simply replaced MSG in their ingredients with yeast extract, which is supposedly the same thing.

Some people will argue that there's no such thing as MSG side effects. I have no idea, personally.

A friend of mine ate at KFC some years ago and got awfully ill. She went to the doctor and the doctor said that she was having a reaction to the MSG. The same thing happened to her when she ate at Canes two years ago. I guess some people can't tolerate MSG. Most Chinese restaurants no longer use it. I always wondered why they quit using it. I guess that MSG makes some people ill.

yep

You will find most all commercial sausage and Andouille contain MSG
