yeah .. i'll pick a couple of chilean sea bass filets on my way from work tomorrow from wal mart for a sea bass almondine with a hollandaise drizzle over lump scallop nuggets ..

Maybe not Walmart, but perhaps WF if you choose.

NONE of what you just described is beyond your abilities to pull off if you want, and the more you do it, the faster and more proficient you get at things. BTW... For the record, I probably wouldn't use a hollandaise to smother it. No need to smother greatness, especially in such a dominant sauce that really doesn't go with it IMO. It takes over. I'd go with a beurre blanc if anything, or just pan seared with some herbs and finish it in the oven with some butter better yet.
