Agreed. I'm surprised to see it referred to as an area-specific thing because I actually thought it was just a "new" thing.
I didn't grow up with it at all. 12 years ago was when I first had a guest make it when we had them over for a boil. Now I see it offered even at restaurants and takeout stands.

WTF? I specifically said I am not a fan.... If I purchase a burger and don't like the taste I'll add something to it to make it taste better; otherwise, I will actually make a burger without any condiments.
Other put condiments on their food because they think it enhances the flavor, like the added taste of the condiment, tone down the spices/flavor, and a variety of other reasons. There is no right/wrong way to do it and I was just adding commentary to a dialogue on an open thread in a public message board.

mom would always mix up a little ketchup and alot of hot sauce for dipping crawfish tails in. (from chalmette, parents grew up in combo of lower 9 and off Tchoup)

So what you’re saying is that sauces/condiments/dips are only there to mask the flavor of bad food. You don’t use any of the following?
-chimichurri sauce
-bbq sauce
-tarter sauce
-cocktail sauce
-ketchup
-Mayo
-mustard
-hot sauce
-soy sauce
-tzatziki sauce
-ANY steak sauces: Diane sauce/peppercorn sauce/mushroom sauce, etc
??
ETA. Sounds like you are just a picky eater. No normal adult orders a burger with only bread and meat.

Not what I am saying for everyone as a whole, just that it's basically how I use them once the meal is done. If you recall, this side-bar conversation started about the use of crawfish dip and how I commented on others trying it and liking it and I did not try it.
I prefer particular, not picky but I don't just eat meat & bread. Lettuce, tomatoes, pickles, onion, avocado... Also, sometimes I do without the bread. But to answer your questions, I do not use majority of those items. I don't like tarter, cocktail, mayo, tzatziki, sour cream and will even substitute them out in recipes that call for them. I will tolerate ketchup if it's already on something or need to cook with it (wife & kids use the crap out of it). Do not think I have ever tried chimichurri sauce. Will cook with BBQ sauce, mustard, hot sauce & soy sauce, but could not tell you the last time I added them to something after the fact.
