What Cut to Grind?

Looking to grind my own meat for some burgers for the game. What cut of meat would you guys suggest? Has anyone done this before? Thanks for the feedback, fellas.

Mix brisket and chuck or sirloin. Or all 3.

Buy a whole tenderloin
Trim the chateaubriand
Grind the trimmings (chain and tips) for burgers
I wouldn’t buy a whole tenderloin specifically for this but use the trimmings this way whenever I do.

Echo above. Equal parts by weight Chuck and Brisket. Cube it. Mix it together and grind on medium.

If I do not have a meat grinder (was planning on using the food processor) will this be an issue? Would I be better suited just having the butcher do it?

I just buy a chuck roast and cube it with a few slices of fatty bacon thrown in to add a little more flavor.
You don’t want mush, which is what you’ll get out of the food processor. If you have a Kitchenaid mixer, I highly recommend getting the grinder attachment. Until you get some sort of actual grinder, I’d just stick with the butcher.
ETA— when using a grinder for burgers, you go for a very loose, coarse grind...the exact opposite of what the food processor will give you.

Don't use a food processor.
If you want to grind your own, get a grinder. Get the meat nearly frozen before you grind.
I like chuck and brisket. You can use trimmings. Use a coarse grind (maybe 3/8"). Use minimal handling. A loosely formed brisket burger is mind blowingly good.

Best I've ever done was tri-tip, short rib, and bacon or chuck roast. My go to is either brisket and bacon or chuck roast and bacon. I also make chicken patties, grind boneless skinless chicken thighs and bacon. You can grab a nice grinder for that level of stuff on Amazon, I got the LEM Might Bite I think it is.
