A crispy fried catfish filet.
This is what I was going to say. Cooked red beans a week or so ago and fried a mess of speckled trout. Perfect.
And good fresh French bread with soft butter.

These are some of my top combinations.
1. Red Beans and rice, fried chicken and you must have with it eggplant casserole. Nuttin better. Much better with the EP casserole.
2. Red beans and rice with barbeque chicken and put some of the barbeque sauce on the red beans....MMMMM.
3. Mustard greens and pork chops.
Cook a big pot of red beans so you can try many of the suggestions. They freeze well. I always cook my beans with ham hocks and Hickory smoke sausage from the Fernwood grocery in Fernwood, Ms.. For me no other sausage will do.

I've had what you describe and thought it was called Hoppin John? And I've never mixed it with RBR, but I bet that would be a great combination.
