Just cause I see it as your staple, how do you do your chicken?

I rarely buy skin-on chicken thighs, but I kind of want to try it cause it always looks good.

It’s like a lasagna but instead of noodles it’s thin cut potatoes - layered with seasoned meat, cheese, corn, black beans and red peppers.

Is it similar?

Close to similar, I use tortillas and salsa. Amongst a few other things

Seasoned pretty liberally with salt, black pepper, seasoning blend or whatever you like. Hit it with a little buttered flavored Pam because I’m trying to avoid the extra fat and calories on my good days. Direct heat on the grill for maybe ten minutes, medium heat. Move it off to indirect and go fix whatever you’re gonna serve with it. Check it in 25 or 30 minutes. If it goes to the plan, the chicken is tender and juicy with a crispy skin. :)

You go skin down on direct heat and then skin side up indirect heat?

Skin up the whole time. If it’s not crispy enough when the chicken is done, throw it skin side down for a minute or two to crisp it up but I seldom have to.
