Finally cut up the pork belly I had cured for bacon and then smoked. So I figured I might as well cook up some biscuits and try it out. The pictures look like the bacon is burnt and eggs are dry as hell for some reason. It was really not like that.

Looks fantastic! I love the lacy edges of fried eggs, and the bacon doesn't look burnt to me.

Essentially...made a bolognese...the almond noodles get extra crispy...so if corners are your thing, might be for you.

I just used the Chef John Folse recipe it is really simple and usually turns out great. I think the key part is cutting the butter into the flour.

quote:

INGREDIENTS: 1/3 cup butter or margarine 2 cups self-rising soft-wheat flour 3/4 cup buttermilk Butter or margarine, melted METHOD: Cut 1/3 cup butter into flour with a pastry blender until mixture is crumbly. Add buttermilk, stirring until dry ingredients are moistened. Turn dough out onto a lightly floured surface; knead 3 or 4 times. Roll dough to 3/4-inch thickness; cut with a 2 ½-inch round cutter, and place on a baking sheet. Bake biscuits at 425 for 12 to 14 minutes. Brush with melted butter.
