Home made red beans and fried chicken...Monday came early
Did some things different this time that made notable changes for the better. Chicken stock instead of water, held browned sausage until last hr vs simmer whole time, and ham shank instead of ham hock (that I read about in one of the last red bean threads).

Ham shank is the bomb but it's sometimes hard to find.

I lucked out...just happen to see those 2 at eye level tucked under the hocks. Once I put it back in and stirred it up the flavor change was drastic.
