Yesterday afternoon I decided to stuff some peppers and cook them on the Keg. Started of with making the filling which was a shrimp and rice dressing basically.
Because some of the peppers wouldn't stand upright some were cut in half. Then they were filled, topped with a little shredded cheese and put in a pan. with a small amount of water for steaming. To keep the cheese from sticking to the foil I would've used to cover them I used another shallow pan and some clips to allow for head-space inside the pan.(sorry no pictures before cooking)Then on the Keg they went at 350 degrees for about an hour.
When steamed I removed the lid/pan and allowed them to brown on top a little and then served.
I got busy making a nice salad and forgot to get further pictures. They came out pretty good but next time I'll cut back on the amount of stock used to mix with the rice.
