Grilling venison steak bites wrapped in bacon, cream cheese, and sliced jalapeños, and a few burgers with a dirty rice for the side. I located a good batch of mich ultras this afternoon and finally got around to getting a Christmas tree decorated for 4lsu2jr's first Christmas.

Try the oven method next time. Made one last night. Left it in the oven overnight. Warming it back up now to sauté the veggies.

There's a thread on it, but basically, in the cast iron skillet in the oven on 350. Stir every 30 minutes or so until you get it as dark as you want. Takes a while but you can chop while it goes. Next to impossible to burn. Right now, my veggies are simmering in the roux in the oven. I needed to run an errand, so I just let them go in the oven. Works great. You can hasten it at 375. I used that temp this time.
