Blackened catfish filets, sauteed zucchini and onions, french bread and some red wine...yep, don't give a damn if it's fish...I like red wine.

found some leftover browned ground chuck (cooked down with fresh onions, garlic, and spices) in the frig. put that on some flat bread with shredded sharp cheddar. sliced tomatoes with salt/pepper on the side.

also had an ice cold Leinenkugel's honey weiss.

corn bread.
Recipe? Here's mine...dates to the very early 1900's out of Hurricane, La. For each cup of cornmeal, and I use the mix with salt and baking powder already added, add 1 large egg, 3 T. oil,1 T. of sugar and enough buttermilk to make a thick but pourable batter.Heat a black iron skillet...a must...on the stove top. Pre heat the oven at 425. PAM the hell out of the skillet and pour in the batter, pop in the oven and go for 20 minutes. Turn it out on a plate and enjoy a slice of Heaven.
