Seasoned up a pound of chicken breast with Julio’s seasoning.
Sauté them in a large skillet until tender.
Add a little water, 1/2 jar of your favorite salsa and half a sick of cream cheese. Stir and chop until cheese is blended well and chicken is shredded.
Coat bottom of baking dish with enchilada sauce.
Scoop meat in tortilla, wrap, and place seam side down. Continue until all meat is used.
Pour generous amount of enchilada sauce on top, some diced green chilies, and generous layer of Mexican blend cheese.
Bake at 350 for 30 min.
When done, cover with cilantro and let sit for about 10 min before using spatula to serve.

Today I cooked a couple of pounds of white beans with ham and pickled pork and then a pan of homemade biscuits.
